MUTKE/ MIXED VEGETABLE STEAMED DUMPLINGS

There’s still plenty of food that’s known and beloved only by the lucky locals. One such versatile vegan dish of Nagpur is dumplings made by mixing vegetables (whichever you prefer), a binder (usually flour's) and baking until golden brown & bubbly or steaming it until cooked.
While there are countless variations of this dish, today we have made Dad's signature dish: Mixed vegetable steamed dumplings. Loads of memories associated with these mutka's and today they have become a source of inspiration for home-chefs like us. Let's recreate this dish and learn how to make the best 'mutke's/mixed vegetable steamed dumplings
INGREDIENTS
🔸2 - carrot (finely shredded)
🔸1 bunch - spinach (chopped)
🔸1 cup - ragi flour/nachni
🔸1cup - semolina/rava
🔸1 cup - green moong sprouts (roughly pounded)
🔸2 to 3 - green chilli
🔸1 - lemon
🔸1 tsp - turmeric powder
🔸1 tsp - garam masala
🔸1 tsp - cumin powder/jeera
🔸coriander leaves/dhaniya patta (optional- chopped)
🔸1tsp - Oil
🔸salt (to taste)
INSTRUCTIONS
1. Start by chopping the spinach and making a rough paste of green moong sprouts & green chilli in a mixer.
2. Add all the ingredients (mentioned above) in a bowl (as shown in the below picture) and give it a good mix to form a dough.
3. Shape the dough to cylindrical shape. Prepare the steamer and grease the tray with oil.
4. Steam the dough for 20-25 minutes on medium flame. Make sure the dough is cooked well by inserting a tooth pick.
5. Cool the dough completely and cut them into shapes you like. Serve with your favourite sauce!
Tip: Do not fry them.
