Watermelon is very low in calories its mostly water - about 92% and is packed with nutrients like vitamin A, C,D, E, B6, B12 and the list goes on. . . Enjoy this simple salad with many variations. We have tried this combination of sweet watermelon, salty feta, and mint - a classic pairing.
- INGREDIENTS
2 cups - Watermelon (with seeds, chilled & cubed)
1 cup - feta cheese (cubed/crumbled)
handful - mint leaves (fresh)
For dressing:
1 tbsp- lemon juice (for a nice little spin)
3/4th tsp - black pepper
- INSTRUCTIONS
1. Place all ingredients in a bowl and toss gently to coat well. Garnish with fresh mint.
Tip: Serve cold; best enjoyed right away!
