Beetroot Chocolate Brownie

These are goey, chocolaty and delicious Beetroot Chocolate Brownies . . . a great way to make your kids eat veggies in their most favourite form & have all the nutrition!!

Prep: 10 minutes    Cook: 30 minutes       Total Time: 40 minutes

 

INGREDIENTS


🔸350 grams - cooked beetroot (peeled & puréed)

🔸200 grams - chocolate

🔸100 grams -  butter

🔸1 tsp - vanilla extract

🔸200 grams - caster sugar/ dates 

🔸4 - eggs

🔸100 grams - oats flour

🔸20 grams - cocoa powder

🔸10 grams - almonds (crushed)


INSTRUCTIONS


1) Preheat the oven to 180 C (350 F)


2) Line a square tin with grease proof or baking paper.


3) Measure the chocolate and butter in a mixing bowl. Put over a pan of simmering water and stir until melted and runny.


4) Add the eggs, vanilla, sugar and whiz until well mixed, then add the flour, cocoa powder, almonds and beetroot puree.


5) Whisk again, then pop into the tin.


6) Bake for 30 minutes until set and just firm in the middle.


7) Leave until cool, then slice into squares.
