MEDITERRANEAN CHICKEN SALAD BOWL

This recipe is inspired by @exploringhealthyfoods is a great go-to lunch, easy to prepare, super-filling and delicious!

The homemade creamy cilantro lime dressing complemented this salad well.

Though many people cringe at the thought of eating salads, but we know for a fact, if you

 give this a try, you are going to love these healthy bowls as much as we do! 


Mediterranean Chicken Salad Bowl

⌚ Prep: 10 minutes         Cook: 10 minutes            Total Time: 20 minutes 

  • INGREDIENTS
  For the Bowl:                                                         For the Dressing :   

🔸 500 grams - grilled chicken (cubed)                    🔸 handful - cilantro (fresh)
🔸 1 cup - cherry tomatoes (halved).                        🔸 1 cup - yoghurt (instead of mayo)
🔸 1/2 cup - onion (vertically cut)                            🔸 1to2 - garlic cloves
🔸 1 cup - red kidney beans                                      🔸 1 tbsp - olive oil
🔸 1 cup - cucumber (sliced)                                    🔸 1 tbsp - lime juice
🔸 1 - avocado (chopped).                                        🔸 himalayan pink salt (to taste)
🔸 1 cup - lettuce (roughly chopped).                      🔸 1 tsp - pepper 
🔸 1 tsp - turmeric powder 
🔸 1 tsp - red chilli powder



  • INSTRUCTIONS

1. Grill chicken (boneless) in a skillet by using turmeric powder, salt and red chilli powder for about 7-10 minutes.

2. In the mean time for the dressing, grind fresh cilantro, yoghurt, garlic cloves, olive oil, lime juice, himalayan pink salt and pepper together.

3. In a large bowl, add all the ingredients and dress with cilantro lime dressing! Your Mediterranean chicken salad bowl is ready to serve.
