MIX VEGETABLE CURD SANDWICH

Quick & Easy Snack loved by all!
One such version of quick snack is 'Curd Sandwich'. Curd is used in this recipe as a substitute for mayonnaise or cheese as it is readily available in all the kithchen's and a ofcourse a healthy option. Let's see how this healthy version is prepared.
⌚ Prep: 10 minutes Cook: 10 Minutes
- INGREDIENTS
🔸 8-10 slices - Whole Wheat Bread
🔸 1 cup - hung curd/yoghurt
🔸 1 cup - shredded carrot
🔸 1 cup - capsicum (finely chopped)
🔸 1 cup - cucumber (sliced)
🔸 1/2 cup - tomato (sliced)
🔸 handful - mint leaves/ pudina
🔸 salt (to taste)
🔸 butter/ghee (as required)
🔸 for seasoning herbs used: rosemary, parsley, basil, black pepper, oregano (all freshly grounded: as required)
- INSTRUCTIONS
- For Stuffing: rinse and finely chop the veggies and add 1 cup greek yogurt or thick curd or hung curd. Make a paste of mint leaves and add it in the curd. Note: all the veggies are raw.
- Season with ⅓ teaspoon black pepper or you can add as per taste. Also add some dried herbs like oregano, basil or mixed herbs and salt as required.
- Mix well. You may do as many variations as you want in the stuffing.
- For the seasoning, I have used mixed herbs i.e. rosemary, parsley, basil. You can Indianize the recipe by adding Indian herbs & spices like coriander leaves, green chilies, chaat masala, garam masala powder and red chilli powder.
5. Making Curd Sandwich: Toast the bread slices by applying some butter or ghee in a toaster or pan. I have used ghee here.
6. Spread the stuffing on the bread slice and cover it with another slice. Press it and cut into two equal parts. Note: Do not toast or heat the sandwich after applying the stuffing, otherwise it will loose its nutrition as the good bacteria in curd gets killed.
7. Serve Immediately.
TIP: use thick curd, hung yogurt or greek yogurt to make the filling
