Beetroot Chocolate Brownie

NARIYAL/ COCONUT BARFI

Soft, chewy, moist 'Barfi' which requires only 3 ingredients. Prepare this quick & easy barfi and satisfy your sweet cravings.


Prep: 5 minutes             Cook: 15 minutes


Back in those days, we had 2 coconut trees in our backyard and we enjoyed the luxury of having homegrown fruits and vegetables. Blessed and forever grateful to my parents for this luxury. We used to help in grating the coconut and rest of the work was done by adults. Notable, my father used to make the perfect coconut barfi and today i have tried to recreate it with minimal ingredients and little changes. In place of sugar i have used condensed milk.


  • INGREDIENTS

  • 🔸3 cup - coconut (grated - fresh or dry) 

  • 🔸250 gram - condensed milk (unsweetened)

  • 🔸¼ tsp cardamom powder / elachi powder

INSTRUCTIONS

1. Put the pan on medium-low heat and add grated coconut/marital. Here I have used fry coconut as it is always available in my pantry.

2. After sauteing the coconut for 2-3 minutes add condensed milk and start stirring it constantly till everything comes together and becomes thick.

3. Sprinkle cardamom powder and give it a final mix.

4. Grease a pan with ghee and put the mixture into it evenly. Pat it lightly.


5. Let it cool down and set for 2 hours roughly. Cut into pieces of any shape and serve.


TIP: At room temperature, It stays good for 2-3 days in an airtight container. In the refrigerator, it stays good for up to 10 days.
